SPINACH, TOMATO & FETA QUICHE

with Almond Flour Crust & Grated Carrot Salad

(Serving size: 2 quiche slices & side salad)

A light-yet-satisfying twist on a classic. Our vegan quiche starts with a silky mung bean “egg” base baked in a golden almond flour crust. We fold in sautéed spinach, juicy tomatoes, and our tangy house-made cashew feta, then finish with a sprinkle of fresh chives. On the side, a crisp grated carrot salad with a Dijon vinaigrette adds the perfect refreshing crunch to balance each bite.

RICOTTA, ROASTED VEG & PESTO SALAD

with Sun-dried Tomatoes, Toasted Pepitas & Pesto Vinaigrette

(Serving size: 2 entree size salads with 2oz of dressing for each salad)

Weʻre always looking for a vehicle for Pesto, who isn’t? This salad is a perfect choice, without the heaviness of pasta. Not that I’m bad mouthing pasta! But sometimes we just need to lighten things up a bit. We’ll be whipping up ricotta from nuts & seeds, roasting marinated local veggies like eggplant, zucchini & bell peppers. We love the depth of flavor of sun-dried tomatoes so we’ll be adding some in for extra umami. Served under a bed of organic greens, topped with toasted pepitas (pumpkin seeds) & Pesto Vinaigrette on the side.

Tikka Masala is a rich & creamy Indian curry dish blending tomatoes & coconut milk with vibrant spices like garam masala, turmeric, cumin, ginger & coriander. Our version is packed with protein rich chickpeas & green peas, carrots, cauliflower & local greens. Served with a side of our Toasted Cumin Seed Brown Basmati Rice.
