CREAM OF BROCCOLI SOUP

with Cheddar & Caramelized Onion Muffins

(Serving size: 2-16oz containers of soup & 2 muffins)

This creamy broccoli soup is one of our favorite comfort foods that’s secretly chock full of veggies including tons of broccoli, celery, carrots, potatoes, onion & garlic. Thanks to cashews & our vegan witchcraft skills we can promise you won’t make you miss the dairy :) Served with our delicious Cheddar & Caramelized Onion Muffins. 

Suggested Heating Instructions: Transfer the soup to a small saucepan & warm on medium-high heat until warm throughout. We love slicing the muffin in half & toasting in a toaster oven or grill it in a hot pan with butter, olive oil or coconut oil.

MEXICAN STREET CORN SALAD

with Creamy Chipotle, Cilantro & Lime Dressing

(Serving size: 2 entree size salads with 3oz of dressing for each salad)

This style of Mexican street corn is called esquite, made with roasted organic corn kernels tossed with chili powder, crema & salt. To make this a complete meal we’ll add in slow cooked black beans & quinoa all dressed up in a chili lime vinaigrette with diced red onion & local grape tomatoes. Served under organic mixed baby greens for maximum freshness with cashew creamy Chipotle, Cilantro & Lime Dressing on the side.
