TUSCAN BEAN SOUP

with Socca Flatbread 

(Serving size: 2-16oz bowls of soup & 2 slices of Socca Flatbread)

This Tuscan bean soup is hearty & thick blending cannellini beans & potatoes to give the soup that a richer feeling. The broth is herbaceous with homegrown rosemary & finished with fresh pesto stirred throughout. We’ll be adding in broccoli & kale to get your serving of greens in too. Served with a side of Socca Flatbread, a Tuscan flatbread that is naturally gluten free made with garbanzo bean flour. 

LENTIL SALAD 

with Goat Cheese, Roasted Cauliflower, Walnuts, Currants, Herb & Spice Vinaigrette

(Serving size: 2 entree size salads with 3oz of dressing for each salad)

This is the most delicious lentil salad, trust us! The folate rich, small & delicate French lentils, also known as Du Poy, are all dressed up in red onion, dried currants, parsley & capers. We’re pairing the dressed lentils with roasted cauliflower, walnuts & cultured goat cheese made from cashews. All served under a bed of organic greens, served with our flavor packed Herb & Spice Vinaigrette on the side.

MUSHROOM “BEEF" BROCCOLI

with Scallion, Ginger, Garlic Rice 

(Serving size: 2 servings of Mushroom “Beef” Broccoli & Scallion, Ginger, Garlic Rice)

We’re taking Chinese style beef broccoli & giving it a plant based makeover! Using Small Kine Farms baby bella mushrooms in place of the beef, this recipe is just as good (if not better!). We stir-fry the baby bella’s with carrots, red bell peppers & lots of broccoli in our house vegan oyster sauce. Served with a scoop of organic Scallion, Ginger, Garlic Brown Rice on the side.
