BRUSCHETTA 

 Tomato, Basil, Tuscan Beans & Garlic & Herb Focaccia 

(Serving size: 2 servings of Bruschetta)

There’s an abundance of tomatoes in the garden and farmers market this time of year, so bruschetta is a weekly family tradition in our family. The tomatoes are finely diced adding in sweet onion, garlic, lots of fresh basil & aromatic organic extra virgin olive oil, adding in slow cooked Tuscan White Beans for a flavorful protein boost and our freshly made GF Garlic & Herb Focaccia is quite a treat! 

Suggested Heating Instructions: Slice the focaccia in half & toast or grill in a hot pan. Top with the tomato & bean salad & enjoy!

GREEK GODDESS SALAD

with Mushroom Souvlaki, Feta & Sunflower Tzatziki Dressing

(Serving size: 2 entree size salads with 3oz of dressing for each salad)

We are pulling out all our vegan witchcraft here for this showstopper salad! We’re making you souvlaki from walnuts & mushrooms, feta from cashews & tzatziki from sunflowers! Served with local cherry tomatoes & cucumbers, kalamata olives & thinly sliced purple onion over a big bed of organic baby greens. We build these upside down to ensure freshness of those delicate greens.

VEGGIE FAJITAS

with House Red Fajita Sauce, Rice & Beans & Chipotle, Cilantro & Lime Crema

(Serving size: 2 servings of Fajita Stuffed Sweet Potatoes, Rice & Beans & Crema)

We are serving up a plant heavy version of sizzling hot fajitas with a medley of veggies- Small Kine Farms crimini mushrooms, zucchini, bell peppers & onions. Tossed with our homemade red guajillo fajita sauce. Served with Gallo Pinto (Costa Rican rice & beans) + Chipotle, Cilantro & Lime Crema, corn tortillas & a slice of lime.
